Today we are MAKING TIME for FESTIVAL SAFETYAs you know, IT'S FESTIVAL TIME in NEW ORLEANS!! So here are a few quick tips to protect your family's health and safety:1. Make your own travel first aid kit, complete with multi-sized band-aids, antiseptic wipes, q-tips, sunscreen, back-up allergy medicines, tissues, paper towels, small flashlight, and insect repellent (if youre planning to be out at night). Carrying Hint: Travel sizes work well and will help all items fit in one of those free gift bags we girls get at makeup counters. 2. Carry extra doses of any and all medicines. Not just for children, but also for mom and dad. This is the best way to avoid an accidental situation, such as an insulin deficiency or dangerous high blood pressure level. 3. Bring extra bottles of water or be prepared to purchase water. It is very important to stay hydrated at these festivals. 4. Dont over-pack. I know I am giving you a list of a few things to bring with you, but even when added up, these are not heavy items (I know, I bring them with me to festivals). The trick is using a lightweight backpack with shoulder padding, with the top of the bag sitting in between the upper portion of your shoulder blades (backpacks should never hang below your shoulder blades). 5. Have a separation plan in place for your entire family. This includes kids, plus moms and dads. If youre going to separate then reconvene somewhere, you must be very specific about where that place is and what time you are going to meet there. For example: Its not good enough to say, OK, well meet at Jackson Square in 20 minutes. You must say, OK, its 3:30pm and well meet on the steps in front of St. Louis Cathedral at 3:50pm. If anyone is not there when you get there, wait until everyone is together. Do not leave. 6. Make sure everyone knows where you are parked or how to get home using mass transit. This is important if you get separated and your children feel the best thing to do is to go home and wait for you to get there. 7. Before letting older kids separate from the group, make sure they are well aware of the various exit routes, in case of emergency. 8. If you are a family of cell phone users, put them on the highest possible vibrate setting. Trying to discern your cell phone ring from loud festival music is virtually impossible. Additionally, text messaging is an excellent way to communicate during these events. 9. If you can, bring an extra cell phone charger because you never know what might happen. When going somewhere unfamiliar I carry mine with me plus I have a car charger. You can never be too careful, plus Im always seeing people complaining about their phone dying just when they needed it.Lastly my Making Time Family, I want you to remember that you are not at a neighborhood block party. These are totally open community events and there is no way to regulate who will be in attendance, or why they are there. It's just all things Candi coming together.For more than 15 years, Candi has been in the field of public speaking. She has a Master of Public Health degree in Health Promotion and Disease Prevention and a Bachelor of Science degree in Psychology. Professionally, she has worked in a bakery (her family's own), restaurants, art gallery, bookstore, hospital, health care company, mental health facility, schools, beauty store, and the list goes on. Throughout her life, Candi has had the same experiences many face; feeling and thinking differently, awkward appearance, domestic violence in the home, low self-esteem, suicidal thoughts, and the list goes on. But fortunately, she allowed those not so great experiences to be building blocks, instead of road blocks. She created a campaign encouraging victims and survivors to speak out against domestic violence. She is on the board of a suicide prevention organization. She speaks annually to various groups of teens, adults, seniors, and other community members throughout the United States.But what's important about her is this, Candi has taken her experiences and combined it with her education to promote HER VISION: Sharing goodness until the world is healthy, wealthy, and wise.Candi Meridith also owns and operates the family business, Minnie Pearl Pies & Pastries, in Marrero, LA. You can find their pies at many stores in and around the New Orleans area. As well, Minnie Pearl Pies & Pastries (and it's catering component, Pearl's Catering) participates in many festivals in the New Orleans area annually. MAKING TIME for OUR HEALTH3/21/2011Hi! What you may not know is that I have high blood pressure and since March is National Nutrition Month I thought this would be the perfect opportunity to make a dish that manages fat & salt and that dish is UNFRIED FRIED CHICKEN.So on today's episode, we are MAKING TIME for OUR HEALTH and I am going to show you how to make fried chicken in the oven. This way we don't deep fry our chicken in oil and help keep our arteries beautiful.SOOOO, LETS GET STARTED...After you watch the vid, here's the recipe:Candi Meridith's Unfried Fried ChickenWHAT YOU NEED1 baking rack1 foil-lined baking sheetnon-stick cooking sprayAn Oven preheated to 425 degreesINGREDIENTS(Serves 5 or 6: Prep: 15 min Cook: 40 min Total: 55 minutes)3/4 cups milk (skim, whole, buttermilkthis is your decision)1 cups fresh white bread crumbs1 tablespoon ground black pepper1 ½ tablespoons cayenne pepper½ tablespoon salt (optional)5 or 6 skinless whole chicken legsCOOKING1. Coat a baking rack with no-stick spray. Place the rack on a foil-lined baking sheet and set aside. Preheat the oven to 425°.2. Add 2 teaspoons of this mix to the bread crumbs and the rest to the milk.3. Dip the chicken pieces in the milk to coat, then roll them in the seasoned bread crumbs to coat. Place the chicken on the prepared rack and lightly coat with no-stick spray.4. Bake for 20 minutes. Turn the chicken and coat again with no-stick spray. Bake for 20 minutes, or until the juices run clear when the joint is pierced with a sharp knife or fork. There should be NO RED AND NO PINK JUICES...JUICES SHOULD RUN CLEAR, CLEAR, CLEAR. MAKING TIME for YOUR MONTHLY BREAST SELF-EXAM3/2/2011It's very important that we MAKE TIME to take care of ourselves. As women, we often forget the importance of maintaining our own health. So on today's episode of MAKING TIME with CANDI MERIDITH, we are MAKING TIME TO GET FAMILIAR WITH OUR BODIES by learning how to do a breast self-exam. Because a woman's breast tissue changes as the month goes on, it's recommended that monthly breast self-exams (BSEs) are done at the same time every month: one (1) week after your menstrual cycle. When doing your BSE, you are looking for dimpling, scaly skin, changes in skin color, discharge from your nipples, swelling, and of course, lumps...OF ANY SIZE. Even the size of a pea is important. ANY breast changes of any kind need to be treated. Don't be afraid. Breast changes are sometimes symptoms of infections, cysts. Even many detected lumps turn out to be benign. BUT YOU MUST GET MEDICAL HELP. **Breast Screening Schedule**Breast self-exam: Done monthly for Women age 20+Breast Exam by a health care provider: Done every three (3) years for Women age 20 to 39Mammogram: Done every year for women 40+ and women who are at risk for breast cancer meaning you have a family member who has been diagnosed with the disease).The earlier breast cancer (or even an infection) is found and taken care of, the better your chances winning!!HOW TO PERFORM YOUR BREAST SELF-EXAM(Adapted from the Breast Self-Examination Shower Card from National Women's Health Resource Center, www.healthywomen.org.)**Before we get started, let me just note: If you don't have full use of both arms, that's OK. You can still do your BSE by simply using the same hand to the same armpit while doing the BSE method written below.**1. Stand in front of a mirror. Examine your breasts with hands at sides, then locked over your head. Look for any of the changes mentioned above. Squeeze both nipples between thumb and forefinger to check for discharge. Then press hands on hips and push elbows forward (like wings) to tighten chest muscles. Again, looking for dimpling, puckering, puckering, redness, scaliness or changes in shape, size, texture or skin color.2. In the shower. BSE is easiest to do when your skin is wet and soapy. In the shower, raise your right arm above your head. And using the pads of your three middle fingers, use small circles to move up and down your entire breast area. You will do this movement from your armpit to the middle of your breastbone--and from your collarbone to the bone below your breast. When done, repeat on your right side. (Please note: The "Lying Down" method is not demonstrated in the video, as it was very difficult for ME to video myself lying down.)3. Lying Down. Lying down helps to flatten the breast, making it easier to examine the breast tissue by pressing it firmly against the chest wall. Place a pillow under your right shoulder. And using the same movements as above, start under your armpit, covering your entire breast area from collarbone to the bone below your breast. MAKING TIME for FAMILY3/14/2011It's always a joy and a blessing to spend time with family and friends. And recently I had the pleasure of MAKING TIME for FAMILY by baking my Ooey Gooey Cake for my aunt's birthday. Baking is the kind of thing that one should do with love and happiness. Why, because desserts make the people who enjoy them feel loved and happy. So on today's episode of Making Time with Candi Meridith, I am teaching you (in a 2 part video) how to make my (and my city's) most delicious & most loved dessert, the Oooey Gooey Cake. And with Easter right around the corner, making your own Oooey Gooey Cake to share with family and friends will be the perfect ending to a great holiday dinner. Cheers and Enjoy.CANDI MERIDITH'S OooooooEeeeY GOOEY CAKEINGREDIENTS(FOR FILLING)1 box butter yellow cake mix1 cup pecans1 egg1 stick butter (softened or melted)1 teaspoon vanilla extract (FOR ICING)1 package cream cheese (softened or melted)1 box or 1 lb of confection sugar2 eggs1 stick butter (softened or melted)1 teaspoon vanilla extractBAKINGPreheat oven to 350 degrees. For filling: Combine cake mix, butter, pecans, egg, and extract together in a bowl. Once your filling looks like a "dough-ball", spread it into an ungreased 13 x 9 inch pan. Be sure to spread the cake dough until it's flat, even and touches each side (and corner) of your pan. For icing: Combine cream cheese, powdered sugar, eggs and vanilla in a separate bowl. When icing is fully mixed and smooth, pour it over top of your filling (BEFORE BAKING). For baking: Bake at 350 degrees for 45 to 50 minutes, until cake color is golden brown. (Ovens vary, so it may take as little as 40 minutes or as much as 55 minutes for your cake to bake. Be sure to use your cake color to decide if it is done.)This is quite an easy cake to make. The prep takes about 20 minutes. And once the cake is in the oven you don't have to do much, but set your timer and check on it maybe halfway through. That's it. One thing you may not know about me is that I once considered suicide. It was _ a time when everything in my live seemed to be going wrong. That was 8 and a half years ago. So why am I still here?Im still here because of Faith, Family, and Friends.FAITH: I spent the lowest part of my suicidal time, lying in bed saying, "GOD HELP ME." It was literally the only thing that calmed the storm in my head down.FAMILY: When I called my mom and said, If I killed myself, would you miss me? She immediately fell into prayer mode. She immediately fell into loving me. And she immediately combated my thoughts of hopelessness with words of love.FRIENDS: One of my friends got me help and walked me through the therapy process.That was my experience. I called out to people I loved and who loved me...My mom was my big cry for help. And when someone comes to you and expresses a desire to kill or hurt themselves, as the person they choose, you have a responsibility. I know you didnt ask for it, but thats now the position youre in. To have an idea of what's happening, here are the Warning Signs For Suicide•Threatening to hurt or kill oneself or talking about wanting to hurt or kill oneself •Looking for ways to kill oneself by seeking access to firearms, available pills, or other means •Talking or writing about death, dying, or suicide when these actions are out of the ordinary for the person •Feeling hopeless •Feeling rage or uncontrolled anger or seeking revenge •Acting reckless or engaging in risky activities - seemingly without thinking •Feeling trapped - like there's no way out •Increasing alcohol or drug use •Withdrawing from friends, family, and society •Feeling anxious, agitated, or unable to sleep or sleeping all the time •Experiencing dramatic mood changes •Seeing no reason for living or having no sense of purpose in lifeSO WHAT CAN YOU DO? Here's what you can do:1.You can immediately begin to pray for the personif you dont feel you know them well enough to pray aloud, do it within yourself. 2.Let the person know that they matter and that the world wont be the same without them. 3.Let them know that you are going to get them help.
